Tofu Won't Do

I have become obsessed with Pioneer Women in the last few weeks. I've pinned a ton of recipes that will suit the picky Mr! You see Forrest loves "manly foods" like steak, BBQ chicken and burgers -and will not go for chick food! So now you will understand how happy I was when I ran across PW's recipe collection specifically for "cowboys."

Time Savers

I have found a fix for the days when I get home from work at 6 and do not feel like cooking!




They are perfect for the occasion and can be super healthy! I'm going to set aside one day every week to make a few meals ahead of time. Today was it! It took me 3 hours and I have a total of 6 meals prepared.

Garden Fresh Fettucine

Tonight's Meal

1 package fettucine
1 large zucchini
2 medium green peppers
2 medium onions
5 garlic cloves
2 tbsp olive oil
4 medium tomatoes
1 tsp salt

1.Cook fettucine. In a large skillet saute zucchini, peppers, onions and garlic in oil until tender.

2. Add tomatoes and salt. Saute for 4-5 minutes longer. Drain pasta; add vegetable mixture and toss to coat.

So yummy...as I type this, I'm eating it!
The hubs is golfing so it's eating in front of the TV for me!

MMM That's Good!

My taste buds are still savoring last nights supper. After eating at Outback this weekend, I decided to recreate Forrest's meal. He had Alice Springs Chicken and ate every bit of it. The original and the at home version were delicious!


To make this meal:

  1. Saute a Chicken Breast Seasoned with McCormick's Smokehouse Rub

  2. Add a Few Strips of Bacon to the Pan

  3. Crumble the Bacon and Place on Top of the Chicken Breast

  4. Top with Monterrey Jack Cheese

  5. Drizzle Outback's Honey Mustard Sauce over the Chicken

Presto.....All Done!

Mom, I boiled the noodles this time!

Last night we had Brandi over for a taste of the Italian cuisine. I had a blast cooking for the evening. The lasagna turned out a lot better than the first time I made it! Back in the day...I forgot to boil the noodles so the lasagna was "crunchy." (I've come a long way. Makes you proud right, Mom?) We also had Caesar Salad with French Bread and a Cream Cheese Poundcake.

The three of us had a good time playing Apples to Apples after dinner. For those who know us well, YES, it did get a wee bit competitive but it was all in good fun. After a few minutes to cool down we were all as chill as cucumbers.

What's for dinner, sweetheart?

Our first encounter with chicken and rice was less than pleasant. Let's just say we learned a lot about having light hearted fun in the kitchen that night.


Me: The food is ready.
Forrest: Ok great. I'll be there in a sec.
Me: Silently cutting my eyes over in his direction to see if he liked it.
Forrest: It's good sweetie. I think it just needs a little salt and pepper.
Me: No, really what should I have done differently?
Forrest: I don't know but it needs something.

Once I called the chicken and rice expert I learned chicken and rice isn't JUST CHICKEN AND RICE. You have to use chicken broth too. Go me!
